Curried Basmati Rice

Serves 8

2 cups basmati rice

4 cups water

2 tablespoons green cardamom seeds

3 teaspoons vegetable margarine

½ cup finely chopped yellow onion

2 garlic cloves, minced

½ teaspoon grated ginger root

2 bay leaves

½ teaspoon each cumin, turmeric, cinnamon, cayenne pepper, and coriander

½ cup cooked chickpeas

4 tablespoons chopped fresh mint

¼ cup slivered almonds

Soak the rice in water for one hour then rinse. Cover with 4 cups of water and bring to a boil. Reduce the heat, add the cardamom seeds and simmer 20 minutes. (Alternatively, use a rice cooker.)

Melt the margarine in a saucepan and sauté the onion in it. Add the garlic, ginger, bay leaves, and spices. Add the mixture to the cooked rice, mixing well.

Fold in the chickpeas, mint, and almonds.
